This week’s edition of Sunday Cooking with Chef Jon Ashton blends two of our favorite courses into one episode: cheesy appetizers and cocktail hour. Combining simple artisan cheeses of Italy – mozzarella, ricotta and Parmesan – with the herby goodness of fresh pesto and zest of lemon, Jon will demonstrate the ease of creating the perfect snack or hors d’oeuvres for spring evenings. Complementing these flavors: the sweet and tangy tannin of the Gin and Jam cocktail, straight from Crystal ships to your home bar.

Creamy Mozzarella and Pesto

8 oz. mozzarella cheese
2 tbsp. fresh pesto
3 tbsp. ricotta cheese
3 tbsp. Parmesan cheese
Zest of one lemon
In a food processor, combine the mozzarella, pesto, ricotta and lemon zest and process to a coarse paste. Scrape into a bowl. Top with a little extra pesto and Parmesan cheese. Season with salt and pepper to taste and serve with flatbread crackers.
Makes 4-6 servings
Crystal’s Gin and Jam Cocktail
2 oz. Gordon’s gin
2 oz. fresh lemon
1 tsp. raspberry jam
Shake all ingredients together with ice, then strain into rocks glass with fresh ice. For garnish, take spoon of jam, lay it across the glass to be stirred into the drink for extra sweetness.
