From Us to You: A Sweet Valentine

While few things are sweeter than a decadent dessert enjoyed aboard your favorite Crystal vessel, there’s the unfortunate reality that not all of our beloved guests can spend Valentine’s Day sailing the world. To express our love and appreciation for you, we’re sharing the recipe for one of the indulgent treats created by Crystal’s talented culinary team. We would love to serve it to you ourselves, over candlelight and paired with champagne, but until we welcome you back aboard, this will have to do.

Cholocate “Delice” (gluten free)

12 servings

Chocolate Sponge:

  • 1 Baking tray
  • 5 oz. Chocolate
  • 2 oz. Butter
  • ½ tsp. Vanilla extract
  • 5 Egg whites
  • 3 Egg yolks
  • 2 oz. Sugar

Melt chocolate and butter together until they are combined and lukewarm. Whip egg whites, vanilla and sugar together until stiff; add egg yolks and mix. Add chocolate and butter combination. Spread the mixture on the lined baking tray (like a roulade). Bake at 375 degrees for 15-20 minutes.

Chocolate Filling:

  • 1 oz. Butter
  • 2 Egg yolks
  • 12 oz. Dark chocolate
  • 8 oz. Whipped cream
  • *Grand Marnier to taste

Whisk butter and egg yolks until fluffy. Melt dark chocolate and add to the egg and butter mixture. Fold in the whipped cream and Grand Marnier. Pipe the filling into dessert molds, then cover with Chocolate Sponge. Refrigerate for a few hours, then remove from molds and place in freezer for ½ hour. Garnish with chocolate and fresh raspberry and serve with vanilla and strawberry sauce.
