Explore the Flavors of the Pacific with Crystal and Chef Jon Ashton
Hawaiian lifestyle is uncomplicated, embodied by the Aloha Spirit of the islands. The cuisine here follows suit, with a focus on fresh ingredients and simple flavors that, when combined, create a taste of the Pacific Ocean, rainforests and plantations that surround life here. There are few better places to enjoy fresh seafood than Hawaii, with market and restaurant menus changing with the tides – literally – dependent on the day’s freshest catch. In the latest episode of our series “Crystal Cruises Presents: A Culinary Journey Hosted by Chef Jon Ashton,” Jon joins local Hawaiian food expert Gio Mazzarella on a quest to sample the very best of one of Hawaii’s signature cuisines: poké.
Follow the pair as they taste their way through the various selections of poké – literally meaning cubed fresh fish – at the spots the locals like best, and work through the preparations of sashimi in its simplest form. Inspired by the “some of the best tuna I’ve ever had in my life,” Jon returns to Crystal Serenity, where Crystal’s Executive Chef Werner Brenner and Chef de Cuisine David George join him to create three distinct versions of the Hawaiian specialties. On their menu: traditional Hawaiian poké with Ahi tuna, local Maui onion, sesame oil and soy sauce, cilantro; King crab, salmon eggs, ginger and gold leaf; and Yellowtail Hamachi, soy glaze, nori and crispy leeks.
